Chocolate Chip Chocolate Cake


125 gm butter - softened
220 gm caster sugar
1 tsp vanilla essence
2 eggs
170 gm self raising flour
30 gm cocoa powder
1/2 tsp baking powder
250 ml milk
200 gm white chocolate - chopped

White Chocolate Frosting:

125 gm butter - softened
100 gm white chocolate - melted and cooled
2 eggs yolk
75 gm icing sugar - sifted


Place butter, caster sugar and vanilla essence in a bowl and beat until mixture is creamy. Add eggs one at a time, beating well after each addition.

Sift together flour, cocoa powder and baking powder. Fold the flour mixture, then fold in chocolate.

Spoon batter into a greased and lined 9 in round cake tin and bake for 30-35 minutes or until cooked when tested with a skewer. Stand in tin for 5 minutes before turning onto a wire rack to cool completely.

To make frosting, place butter in a bowl and beat until light and fluffy. Add chocolate, egg yolks and icing sugar and beat until smooth. spread frosting over top and sides of cake.
